I love fall for a number of reasons, but at the top of the list are the many varieties of pumpkin desserts. This recipe has been around for a long time and I have seen it called Pumpkin Crunch, Pumpkin Cake, Pumpkin Surprise, and I am sure there are others. I can guarantee that the one thing you will call it is absolutely delicious! It is a favorite of my family.
Here is the recipe:
1 large can pumpkin
1 large can evaporated milk
3 eggs
1 cup sugar
1 teaspoon salt
½ teaspoon pumpkin pie spice
1 tablespoon cinnamon
1 box yellow cake mix
2 sticks butter
1 cup chopped nuts (optional)
NOTE: if you use pumpkin pie mix, don’t use spices. Personally, I prefer to use pumpkin and add the spices.
Mix the pumpkin (spices if needed), milk, eggs, sugar and salt together and pour into a greased 9 X 13 pan. Spread the yellow cake mix (dry) over top and optional chopped nuts. Melt the butter and pour over entire top. Bake at 350° for 55-60 minutes.
Add a generous dollop of whipped cream and enjoy!!
