What a wonderful busy weekend. We were able to all be together to celebrate Easter and Lainey’s birthday. Ella and I also found time to make a delicious chocolate pie.

Now the pie goes in the freezer for 4 hours. Here is the recipe:
Chocolate Pie
Crust:
9 graham crackers (We used chocolate graham crackers to make the pie even more chocolately!)
5 tablespoons melted butter
2 tablespoons sugar
Filling:
½ cup sugar
3 ounces cream cheese, softened
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/3 cup milk (We used heavy whipping cream)
8 ounces frozen whipped topping, thawed
Preheat oven to 325°. Crush graham crackers finely.
In a medium bowl, combine graham cracker crumbs, butter, and sugar. Pour into a 9-inch pie plate and press into sides and bottom.
Bake until golden brown and fragrant, 15 to 20 minutes. Remove from oven and cool at least 1 hour.
For the filling:
In a large bowl, combine sugar, cream cheese, and vanilla. Stir until evenly blended. Add cocoa powder and mile in alternating batches, a few tablespoons at a time, until evenly incorporated.
Gently fold in whipped topping until well-combined. Pour into cooled crust and smooth the top with a spatula. Freeze at least 4 hours or until serving.
Thaw for 5 to 10 minutes before serving.
Time for the Easter Egg Hunt! Although it was cold, we were able to fit it in before the snow arrived.

Here is what the backyard looked like this morning. About 3 inches of snow overnight. Where are you Spring? I am ordering flower seeds tonight. Maybe that will bring on warmer weather!!
